Grapes that have ripened slowly on clay soil mixed with gravel are brewed using traditional methods. A deep ruby color and rich aromas of blackberries and spices spread. Supple, thick tannins and well-balanced acidity are fused together, and the complex nuances of aging are attractive. A masterpiece that combines power and elegance and demonstrates its aging potential.

Tasting notes
Deep ruby red with subtle hints of garnet on the edges.
Immediately after opening, an attractive aroma spreads. In addition to the fruity aroma of ripe cassis, black cherry, and plum, there are elegant nuances of violets and dried herbs. Furthermore, the aroma of barrel aging, such as toasted oak, vanilla, licorice, and subtle spices (clove and cinnamon), adds complexity.
The attack is supple and smooth. In the middle, powerful fruit flavors and firm tannins spread, giving the impression of a solid structure. The acidity is moderate, giving the wine freshness and balance.
The aftertaste is long and lasting, with hints of dark chocolate, cedar and mineral notes.

Production

Soil: Deep gravelly soil with a coarse texture.
Cultivation method: Strong pruning to improve ventilation and ensure even distribution of grapes. Pruning, thinning of leaves on both sides, and arrangement.
The soil is tilled or weeded to encourage deep roots and maximize the soil's properties.
Harvesting: Hand-picked, destemmed and then hand-sorted on a sorting table.

Winemaking

Low temperature maceration (below 5°C) before fermentation is carried out for more than three weeks.
Only gravity flow is used for wine movement, no pumping over is done.
Aging: 40% new barrels, 60% one-year-old barrels.
Aging period: 14 months.
