Tasting notes
Txakoli iKatxina s a white wine made from Ondaravi Zuri, a native grape variety that is cultivated only in this region. Influenced by the gentle breezes from the Cantabrian Sea, it becomes a fresh and vibrant wine rich in fruit flavors. The concentrated aromas spread across the palate, leaving a pleasant taste behind.

Pairing
It pairs ideally with fresh dishes such as gourmet and cured sausages, salads, rice, sushi, and spicy dishes, particularly seafood. Serve at a temperature between 7° and 11°.

Production

Due to the influence of the climate and the slow growth cycle of Ondaravi Zuri, grape harvesting occurs at the end of September. The vineyard produces grapes with a perfect balance of ripeness and acidity. The natural juice of the grapes is obtained with minimal pressure and minimal bruising from the skins. After fermentation is complete, the liquid is allowed to rest at low temperatures for at least 3 to 4 months before bottling. This process preserves the natural carbonation that occurs during fermentation.

About the Winery

Bodega Katxina

The bodegas was founded in 2014 to promote Txakoli produced by the family… for several generations! They boast eight hectares of vineyards surrounding the winery building. Grapes are growing on terraced trellises and arbors, all south-facing and on hillsides descending to the mouth the River Oria. Family-owned fields are caressed by the winds coming off the Cantabrian Sea. This enclave was specially chosen for the optimal ripening of their grapes.
