Producer: Founded in the 1930s. A prestigious Chassagne estate run by Pierre Ramonet's grandsons, brothers Noel and Jean-Claude Ramonet.
Vineyard: "Les Caillerets," a renowned Premier Cru vineyard in Chassagne-Montrachet. As the vineyard name suggests (caillou = pebble), the soil contains a high proportion of limestone and pebbles.
Vine Age and Yield: The average vine age is approximately 60 years, and the yield per hectare is extremely low.
Viticultural Philosophy: They believe that healthy soil, mature old vines, and low yields are the keys to high quality, and in recent years, they have focused even more on vineyard work.
Aging: Aged for 12 to 15 months in a mix of new and used barrels (generally 30% new oak), depending on the quality. It is aged for a long period on its lees, with light filtration and very restrained bâtonnage.
Winemaking Philosophy: Aged primarily in neutral French oak barrels, resulting in a reductive, flinty, and powerful style.
