Technical Data

Soil: Kimmeridgian limestone. Les Preuses is one of the top Grand Crus owned by Dauvissat, with a thin layer of marl over deep limestone.
Viticulture: Vincent Dauvissat aims for natural cultivation, with minimal or no pest control.
Harvest: Grapes are hand-picked and not destemmed.
Fermentation: Partially fermented in enamel tanks, partially in wooden barrels.
Aging: All aging is done in 6-8 year old used barrels, allowing the wine to slowly develop on its lees with air. Unfiltered is the standard.
Winemaking Philosophy: One of Chablis' most traditional producers, dedicated to maximizing the unique character of each plot. Considered alongside Raveneau as a top producer.
