Tasting notes
Colour: Golden in colour. Fine, persistent bubbles.
Nose: Rich, delicate, complex yet refreshing aroma, with floral notes at first, followed by apricot and mirabelle notes.
Taste: Deep and taut, with a mineral and elegant flavor. You can feel the style unique to aged champagne.

Production

- The harvested grapes are vinified separately for each plot.
- Alcoholic fermentation at low temperatures
- Yeast: Saccharomyces cerevisiae (commonly used as budding yeast and baker's yeast)
- Malolactic fermentation is carried out
- Natural fining, no artificial fining
- Very low sulfite content (approximately 1/3 of the permitted level)
- 6% of the wine is aged in oak barrels for 9 months
- Aging: 10 years or more on the lees
- Dosage 5 g/L
