Fermented in concrete tanks and aged in barrels for three years while stirring the lees. Light and aromatic with notes of white peach, salt, and pear. The palate first develops white flowers, then gradually develops into mineral and white pepper notes. A perfect pairing with roast chicken or shellfish.
