WALL Aoyama will host a special winemakers' dinner featuring Julien Pilon, an up-and-coming producer from the Rhone region.
■ About the Winemaker
Born and raised in the Rhone Valley, Julien Pilon is a winemaker who honed his skills for over 10 years at renowned wineries such as Mas Amiel (Roussillon), Terra Remonta (Spain), and Jean Pierre Villa (Rhone).
Calling himself a "landless winemaker," he started making wine as a négociant in 2010. What began as a 1.5-hectare vineyard has now expanded to approximately 5 hectares, with all harvesting done by hand, and a transition to organic farming is underway.
For his white wines, which account for 80% of his production, he strives for a balance of richness and maximum freshness. His understated, stylish approach, prioritizing nuance over power, has earned him recognition as "one of the most exciting producers of white wine in the Rhone today."
