ニュイの樽が、蒸留酒に宿した優雅さ。

“Vents d'Anges”シリーズ初のシングルカスクです。ヴァンサン・ゴディエのニュイ・サン・ジョルジュ プルミエ・クリュ レ・ダモードの熟成に使われた228Lのフレンチオーク樽へ、2021年3月19日、樽が空いた同じ日の午後に蒸留したディスティラートを充填しました。古い黄金色から銅を帯びた色調、栗や穀物、胡桃、香ばしく焦がしたような香り。厚みとクリーミーな質感があり、乾いた胡桃の風味が長く続きます。

Tasting note

Appearance Clear and sparkling, with nuances ranging from old gold to coppery red. Nose First Impression Powerful, with notes of chestnut, grain, walnut, and a savory, toasted aroma. Second Impression Oak and delicate, wine-like aromas. Palate Attack A smooth mouthfeel with a soft impression. Mid-palate Rich and full-bodied with a creamy texture, the aromas from the nose expand in the mouth. Finish A long-lasting and very pleasant dry walnut flavor.

Winemaking & technical data

Distillation

Our slow and precise distillation is carried out using an "Istill" distiller, which minimizes water and energy consumption.

Our unique process involves no removal of grain husks or filtration from mashing to the end of distillation. The cube-shaped stainless steel tank, equipped with powerful agitators and six heaters, allows for gentle distillation over 20 hours of heating without scorching.

The hybrid distillation column is fitted with temperature sensors and valves, producing a distillate with an alcohol content of approximately 65%. The distillate is barreled the day after distillation without any initial dilution.

Aging

Aging in wooden barrels slowly alters the components of the distillate through gentle contact with oxygen, while gradually extracting aromas from the barrel itself.

Our new barrels come from the workshop of Jérôme Faillée, a cooper who holds the Meilleur Ouvrier de France (MOF) award. He cherishes the philosophy of maximizing the use of the wood itself, rather than discarding complex wood pieces.

Burgundy wine barrels are sourced from Veronique and Vincent's vineyards in Nuits-Saint-Georges, or from close producers in the Côte de Nuits.

The act of selecting a single barrel is more complex than choosing a blend. At a certain point, one must compare multiple whiskies and imagine not only their current state but also how they will evolve during future aging.
