Mercurey Blanc 2023

Tasting note

A radiant pale gold with a youthful, transparent tone. Ripe yellow fruits such as white peach and pear are layered with the citrus aroma of lemon peel and lime. Next, the aroma of white flowers such as acacia and white rose spreads delicately, followed by toasted notes from new oak, roasted almonds, and nuances of vanilla. The attack is fresh, yet immediately reveals rich fruit and a thick texture. The fullness from the barrel aging and the extended acidity with minerality are in perfect harmony, and the aftertaste is long and lingering with a subtle smoky and salty taste.

Food pairing

Pan-fried scallops with burnt butter and lemon sauce Chicken breast ballotine with white wine and cream sauce White mold cheese (such as Brie de Meaux)

Winemaking & technical data

Cultivation

Terroir: Brown colluvial soils with limestone, clay and silt, with a moderate gravel content.
Age of vines: Average 34 years

brewing

The grapes are harvested and sorted by hand. They are then gently pressed and left to rest for 36-48 hours before being fermented in oak barrels.
Aging: Aged for 10 months in 100% oak barrels (25% new oak).
During the early stages of aging, the lees are stirred (batonnage) to give the wine complexity and texture.
