太陽に恵まれた2022年に、3種の白ぶどうをブレンドしてテロワール全体の均衡を描いたキュヴェ。ベルジュロンの果実味とエレガンス、アルテッスの繊細さ、ジャケールのフレッシュさとミネラルが、それぞれの役割を果たします。麦わら色の外観に、桃やトーストしたアーモンド、バター、甘いスパイスの香り。繊細で奥行きのある味わいは緊張感を残して締まります。白身肉のソース煮や淡水魚の料理と。

Tasting note

Straw yellow in colour. Fruity nose of peach, toasted almonds, butter and sweet spices. Delicate and deep on the palate, refreshing and delicious, with a warm, mineral and taut finish. Serving temperature: 12-13℃

Food pairing

Gougères, freshwater fish dishes, white meat in sauce, potato gratin with blue cheese, and cheese platter.

Winemaking & technical data

The grapes are harvested from south and southwest facing limestone slopes and glacial moraine hillsides. The vines are grown organically and biodynamically.

The harvest is done entirely by hand between September 10th and 25th, and the grapes are transported in wooden crates to preserve the integrity of the bunches. They are pressed immediately after harvest without destemming.

Vinification: Cold rest. Fermentation begins with indigenous yeasts. Ageing in tanks (60%), barrels (30%) and amphorae (10%). Malolactic fermentation.

The dates for racking and bottling at the Domaine are determined by the phases of the moon. At bottling, SO2 is added at 40mg/L or less.
