マヤカマス山脈の麓に広がる家族経営の自社畑から生まれる、カベルネ・ソーヴィニヨン100%。1世紀以上にわたり人の手が入ってきた土地との深い結びつきを、そのまま一本に映しています。大地やダークプラム、チョコレート、タバコ、スパイスの力強いアロマ。口に含むと濃厚でまろやかな味わいが広がり、ベルベットのようなタンニンと引き締まった酸が充実した口当たりを支えます。余韻まで畑が息づく味わいです。

Tasting note

The powerful aromas of earth, dark plum, chocolate, tobacco and spices are apparent. In the mouth, the wine is rich and rounded, with seamless, velvety tannins. The firm acidity enhances the well-balanced, full mouthfeel, which continues on to a lingering finish that expresses the essence of the terroir created by Cathiard Vineyards.

Winemaking & technical data

After careful destemming, the grapes are optically sorted to ensure that only the best berries are used. The grapes are gravity fed into the fermentation tanks where they are cold soaked for up to 5 days. Fermentation is temperature controlled and involves gentle pumping over and punching down.
After 30 days of aging in tank, the wine undergoes natural malolactic fermentation in new French oak.
Aging: 80% new French oak barrels, the rest in special vats for 18 months
