9年の澱熟成が磨いた、ディジーの丘。

ディジー村、「ディジーの山」の頂に近い南西向きの急斜面に広がる、わずか1haの区画コルヌ・ボートレイ。1960年植樹のシャルドネが、粘土とミルストーンの礫を含む土壌に根を張ります。やや深みのある麦わら色。フレッシュなパイナップルや糖漬けシトラス、トーストしたブリオッシュの香りに、リコリスやビターオレンジが重なります。9年に及ぶ澱熟成が育んだクリーミーな泡と、ミネラルの緊張感。鶏のローストや熟成コンテとともに食卓で。

Tasting note

A somewhat deep straw color. A rich and complex expression with aromas of fresh pineapple, candied citrus, and toasted brioche, layered with nuances of licorice and bitter orange. It possesses the richness and volume reminiscent of Pinot Noir, derived from clay soils, with a creamy and delicate mousse. The D.T. version undergoes a longer aging period on lees than the regular version, characterized by the coexistence of more developed tertiary aromas (notes of toast, hazelnut, and honey) and remarkably preserved freshness. This is a powerful and long-finishing wine made for the dining table.

・Single vineyard "Corne Bautray," in Dizy. Upper slope (near the summit of "Montagne de Dizy"), steep southwest-facing slope
・Area approximately 1ha, Chardonnay planted in 1960, Chablis pruning style
・Soil: Clay and millstone (quartzite) gravel mixed over Campanian-era chalk layers
・Cultivation without herbicides, most of their own vineyards are organically managed
