三種の樽が重ねた、ソリニーの原点。

ソリニー蒸溜所の定番レンジにおける、最初のシングルモルトです。新品のフレンチオーク樽、ブルゴーニュワイン(ピノ・ノワールとシャルドネ)の使用樽、自社蒸溜所の元ウイスキー樽を組み合わせて仕上げました。ノンチルフィルターゆえのオイリーな質感を帯びたオレンジ色。穀物とはちみつの力強い香りに、栗やプルーン、プラムタルトを思わせる焼き菓子のニュアンスが続きます。余韻にはナツメグのスパイス感。

Slightly cloudy due to the oily texture caused by non-chill filtering. scent: - First impression: Powerful aromas of grain and honey. First impression: Fruity with chestnut, rancio, prune and chestnut cream. Hints of baked goods like plum tart and almond cake with a subtle hint of toasted wood. Taste: ・Attack: Gentle and smooth. -Mid-palate: A walnut oil-like texture envelops the mouth, and the flavors of fruit and baked goods gradually spread. Finish: Long and clear. The spice of nutmeg leaves a refreshing aftertaste.

Malting

Our partner malts the barley using a method that respects the individuality of the grain and preserves the aroma of the barley.

fermentation

From preparation to fermentation,
We aim to maintain the quality of our malt through minimal and controlled manipulation.
Fermentation takes place under temperature control for 5 days.
After the first stage, which primarily produces alcohol, the yeast is placed in an acidic, oxygen-free environment, which encourages the production of complex molecules with intense aromatic properties.

distillation

Slow, precise distillation is carried out using Istill stills, which consume little water and energy.
Using our unique manufacturing process, the grain husks are left in place from preparation to the end of distillation, and no filtration is performed.
The cubic stainless steel tank is equipped with a powerful agitator and heater.
It can be heated for over 20 hours of distillation without burning.
A hybrid distillation column equipped with temperature sensors and valves
The distillate obtained has an alcohol content close to 65% by volume.
No initial water is added and the wine is bottled as is.

Aging

Aging in wooden barrels allows the components of the raw spirit to evolve through gentle contact with oxygen, gradually extracting the aromas derived from the barrels.
By selecting a variety of barrels from different regions, we layer the aromas and flavors born from the bounty of the forest onto our malt spirits.
By utilizing our wine aging know-how, we can preserve the individuality of the raw liquor.
We select barrels that bring out the essence of the wine.

The new barrels come from the workshop of Jérôme Fouilly, a cooper and Master Craftsman of France (MOF), who believes in making the most of the wood and using even the most difficult parts without discarding them.
The Burgundy wine barrels come from Véronique and Vincent's own vineyards in Nuits-Saint-Georges or from the vineyards of their winemaking friends in the Côte de Nuits.
