Tasting note

The appearance is a deep golden color with beautiful brilliance and delicate strings of bubbles. The aroma combines the scent of oak barrels with an enchanting quality, featuring notes of delicately dried spices, pear compote, and ripe figs. The intoxicating aroma of white truffles intertwines with delicate oxidative nuances, adding depth and complexity. On the palate, the texture is mellow and silky due to long-term aging. Flavors of toasted almonds and patisserie lead into a finish of vanilla and oak barrel notes, while the delicate effervescence and long aftertaste enhance the overall experience.

Winemaking & technical data

Viticulture: A single plot in Cramant, a Grand Cru-classified village. It uses century-old vines planted in 1926, some of which are still producing today. The vines' roots penetrate several meters deep into the chalky soil of the Côte des Blancs, capturing the essence of this special terroir.

Winemaking: The entire volume is fermented and aged in Burgundy barrels for one year (12 months). Malolactic fermentation is carried out. 20-30% reserve wine is used, followed by over 8 years of long-term aging on lees. Bottled in June 2016. Light dosage with 6g/L residual sugar.
