自社畑のゲヴェルツトラミネールを丸ごと発酵・蒸留した、華やかで上質なグレープ・スピリッツ。色調は無色透明で、繊細に包み込むような清らかなアロマが立ち上がります。花びらやジンジャーを思わせる複雑で洗練された香り、なめらかでありながら持続性のある口当たり。品種特有のほのかなスパイス感を残す後味が印象的です。チーズケーキやフルーツタルトとともに、食後のひとときを優雅に。

Tasting note

The color is colorless and transparent. A delicate, enveloping and pure aroma with a complex and sophisticated scent reminiscent of flower petals and ginger. The palate is smooth, yet persistent and elegant. The aftertaste leaves a subtle spicy note that is characteristic of Gewurztraminer.

Winemaking & technical data

■ Harvest
Harvested slightly later than wine grapes.
While other distilleries use pomace from wineries,
Verum uses whole, fully ripe grapes from its own vineyards.
The biggest advantage is that this completely eliminates the risk of oxidation.

■ Brewing
To prevent oxidation, the wine is brewed without using any sulfites and avoids contact with air.
Fermentation begins as soon as possible and is completed in approximately 8 days at 15-20°C.
Storage is short-term and maintained in a nitrogen environment.
Because the winery and distillery are located in the same facility, distillation can be carried out immediately after fermentation is complete, eliminating the risk of oxidation during transport.

■ Distillation
After conducting research in various parts of Italy, we have introduced the optimal alembic still.
The heat is very gentle, extracting delicate flavors without burning the grapes.
The distillation technology has a tradition dating back to 1788, and the company has a track record of supplying prestigious brands both in Spain and abroad.
Only the heart part of the distillate (approximately 75% alcohol content) is used, and the alcohol content is adjusted with mineral water.

■ Aging
The presence of oxygen is important at this stage, creating complex aromas and a soft flavor.
Aged in wooden barrels for 3 months.
Only old barrels are used, avoiding strong barrel aromas and refining the flavor through slight oxidation through the wood.

■ Finishing
Finally, it is filtered and bottled.
The result is a spirit that combines transparency and delicacy, fully expressing the individuality of Gewürztraminer.
