石灰質を多く含む畑のシャルドネとピノ・ノワールを手摘みし、野生酵母で発酵。長期の瓶内熟成が、細かく持続する泡をもたらします。深い黄色の色調から、蜂蜜やカリンのジャムのような豊かな香りに、胡椒やオレンジの花、ココナッツミルクのニュアンスが重なります。ドザージュ・ゼロゆえの張りのある酸と、カラメルリンゴやトーストの風味。スモークサーモンやリヴァロとともに。

Tasting note

The deep yellow colour brightens up the series of fine, persistent bubbles. The first impression is of rich aromas of honey and quince jam, with exotic nuances (pepper, orange blossom, coconut milk). Overall, it exudes complex aromas reminiscent of smokiness and snap peas. In the mouth, the bubbles give it a firm density and sharp bite, while the flavors of caramel apple and toast spread. The strength of the wine is beautifully balanced with its acidity. The aftertaste has a firm structure, but also retains a delicate limestone minerality.
