Chardonnay, Chenin Blanc and white-pressed Pinot Noir are hand-harvested and fermented spontaneously with native yeasts; the base wine spends around six months in 500-litre oak barrels before its second fermentation in bottle. Finished as a Brut Nature with zero dosage and no added sulphur. White flowers, orchard fruit, lemon zest and fresh-baked bread lead to a bone-dry finish.
