Tasting note

It has a bright pale yellow color and aromas of grapefruit, lemon, pear and acacia, as well as hints of dried fig, baked apple, ginger, minerals and oak. Aging adds nuances of vanilla, cashew nuts, and toast, giving the aroma depth and complexity. When you put it in your mouth, the delicate bubbles are pleasant, and the concentrated fruitiness spreads, while the sharp acidity and minerals support the flavor. The finish is elegant and powerful, with a harmonious balance of maturity and freshness.

Food pairing

Sea urchin consommé jelly, grilled shellfish, sushi, octopus and potato with pesto sauce, spring vegetable tempura

Winemaking & technical data

Bouvry is a vineyard located on the southwest slope of the village of Vertus, which has been owned by the Duval-Leroy family for generations and whose vines are approximately 50 years old. In order to understand the characteristics of this single vineyard, Duval-Leroy produces a vintage champagne every year, which is rare in the Champagne region.

It is partially fermented in stainless steel tanks to maintain the purity of the minerals, and partially fermented in oak barrels to add a delicate woody aroma. In particular, the weather was favorable in 2005, and the fresh taste and the complex aroma of barrel aging are perfectly harmonized, resulting in a champagne with strength and concentration.
