Winemaking & technical data

Location/Vineyard conditions: Côte des Bar, right bank, near Polisy to Celles-sur-Ource. Planted in 1960, south-facing slope. Soil: Portlandian limestone, 60 cm of sandy clay, and a layer of chalk.

Brewing and aging: First pressing grape juice (free run only), wild yeast fermentation, unfiltered/unfined, zero or almost zero dosage (non-dosage)

Cultivation and yield: Organic/no chemical pesticides (tends towards organic), yields are kept very low (typically around 25-26 hl/ha)
