Rosé d'une Nuit

One night on the skins, and this pale salmon pink.

As the name "rosé of one night" suggests, a brief maceration draws out colour and aroma and nothing more. Fermented cool in stainless steel and aged on its lees. The nose mixes grapefruit and other citrus with strawberry and cherry. The palate is soft and generous in fruit, closing on a light, welcome touch of bitterness. Serve it well chilled, with octopus carpaccio or ceviche.

Tasting note

Pale salmon pink in color. Aromas of citrus fruits such as grapefruit blend with red fruits such as strawberries and cherries. On the palate, it is smooth, with a pleasant fruity flavor and richness, accented by a light bitterness.

Soil: Deep clay-limestone soil at an altitude of 280-300m

Cold pressing and inactivation during pressing.
Fermented at low temperatures in stainless steel tanks, then aged on the lees in stainless steel tanks.
The lees preserve the fruitiness and freshness and add volume.
