シャブリを思わせる、ボルドーの白。

有機とビオディナミ(デメテール認証)で育てたソーヴィニヨン・ブランとソーヴィニヨン・グリを半分ずつ。黄金がかった輝きのあるレモンイエローで、ライムやグレープフルーツの柑橘に、白い花、洋梨、ほのかなハーブとスモーキーなニュアンスが重なります。丸みのあるテクスチャーと豊かな果実味をミネラルと酸が引き締め、塩味を帯びたレモンピールの余韻へ。スズキのカルパッチョやホタテのソテーと。

Tasting note

When poured into a glass, it is lemon yellow with a golden sheen. The aroma is a blend of citrus fruits such as lime and grapefruit, with white flowers, pear, subtle herbs and smoky nuances. When you put it in your mouth, it is fresh, yet has a rounded texture and rich fruitiness, and the pleasant minerality and acidity tighten the whole. The aftertaste is long-lasting, with aromas of salty lemon peel and white peach, and it has the structure and elegance reminiscent of a high-quality Chablis. With age, you can expect complex flavors like honey and toast to develop.

Field area: 3ha out of a total of 40ha
The vineyards are run according to the strictest standards of organic and biodynamic farming.
(Ecocert certified in 1999, Demeter certified in 2012)

brewing
The harvest takes place early in the morning, and only the best grapes are selected.
This is followed by a 24-hour maceration before fermentation and pressing in a closed air press.
The temperature during alcoholic fermentation is maintained at 14-16°C.
The pressed juice is oxidized before being clarified with bentonite and then blended with the free-run wine.
This process naturally protects the wine from oxidation and reduces the amount of SO₂ used.
