Tasting note

Pale lemon yellow in colour, the aroma features pure aromas of white flowers, apples and pears, complemented by nuances of honey, chamomile and limestone from minerals. Over time, the aroma of dried apricots and almonds emerges, increasing in complexity. On the palate, fresh acidity with tension forms the backbone, The fruit is clear yet has a deep layer of flavor. The high density resulting from the low yield and the subtle toasty aroma from barrel aging blend together in a balanced way, creating a smooth texture. The finish is long-lasting with a salty minerality, leaving a clean and elegant aftertaste.

Winemaking & technical data

Cultivation
The field is plowed and short-shoot pruned (6-8 buds per plant, up to 4 cordon-trained plants).
Organically grown and Ecocert certified.

Vinification
Harvesting: Hand-picked. The grapes are sorted on sorting tables at the end of each row in the vineyard and then placed in flat crates for transport to the winery.
Yield: Approximately 30 hectoliters per hectare.
Vinification: pneumatic pressing. Clarification by resting for 24 hours.
The wine moves to the cellar using gravity alone.
No yeast or sugar is added, and the wine is fermented very slowly in barrels.
Aging: 12 months in barrels: 16% new, 1-5 year old barrels.
