夜間収穫が守った、張りのある酸。

夜間から早朝にかけて手摘みされた低収量のぶどうから生まれる、南仏を代表するシャルドネのひとつです。淡い黄金色にわずかな緑の輝きを帯び、白桃や洋梨、熟した柑橘の果皮に、アカシアの花やほのかなバニラ、トーストしたアーモンドが重なります。凝縮感のある果実味を張りのある酸が引き締め、控えめな樽香は果実の純度とミネラルを引き立てる役に徹しています。ホタテのソテーや鶏むね肉のローストとともに。

Tasting note

Pale golden yellow with a slight greenish sheen. From the glass, notes of white peach, pear and ripe citrus peel are layered with nuances of acacia flowers, subtle vanilla and toasted almonds. When you put it in your mouth, you can taste the concentrated fruitiness, but the taut acidity from the night harvest tightens the whole, giving it a very refined impression. The oak aroma from the new oak barrels is subtle, serving only to highlight the purity of the fruit and its minerality. The finish is clean and persistent, with a subtle saltiness and refined flavor remaining quietly, making this a wine that exudes the refinement of southern French Chardonnay.

Winemaking & technical data

Vinification

The vineyards are kept to a very low natural yield of 25-35 hectoliters per hectare.

The grapes are hand-harvested at night or early in the morning, sorted, de-stemmed, and then macerated in stainless steel tanks at low temperature for approximately 10 hours.

After pressing and racking, the wine is fermented in new Allier oak barrels, then aged on the lees for up to three months before being racked.
