A clear-cut Aligoté raised on cool slopes and limestone soils. Lemon and green apple on the nose, layered with white flowers and pear. The palate runs straight through on sharp acidity, leaving a saline minerality that lingers. Farmed biodynamically under Demeter certification, the fruit is free of anything extraneous — light on its feet, yet with a real core. Fine as an apéritif, and just as good with oysters or a fresh goat's cheese. A bottle you can open without ceremony.

The mid-palate reveals flavors of white peach and lime, followed by a lingering salty minerality that tightens the overall flavor. The finish is clear and refreshing, a wine that perfectly balances freshness and structure.
