淡いゴールドの色調から、ライムやレモンピール、白い花の繊細なアロマに、ほのかなバターとヘーゼルナッツのニュアンスが重なります。口当たりはクリーンで引き締まり、瑞々しい酸とミネラル感が果実味を美しく支え、透明感のある余韻が長く続きます。樽由来のコクは控えめで、エレガントさと芯の強さを併せ持つ仕上がり。ソースを添えた鶏肉料理やキノコを添えた仔牛のポワレとともに、食卓を静かに格上げしてくれます。

Tasting note

Pale gold hue. The glass reveals delicate aromas of lime, lemon peel and white flowers, layered with subtle hints of butter and hazelnut. The palate is clean and firm, with fresh acidity and minerality beautifully supporting the fruitiness, resulting in a long, clear finish. This sophisticated Saint-Romain combines elegance with strength.

Winemaking & technical data

Cultivation

The Saint-Romain vineyards are mainly located west of Auxey-Duresses, in a valley that leads to the villages and vineyards of the Hautes-Côtes de Beaune.

Just over half of the production is white wine.

Vinification

To preserve the precious aromas and flavors of Chardonnay, the grapes are brought to the winery immediately after harvest and pressed immediately. Alcoholic and malolactic fermentation takes place in French oak barrels, and the wine is then aged for a total of just over 12 months before being bottled and left to rest in the cellar for approximately 6 months.

The proportion of new oak barrels is limited to 25%, allowing the wine's inherent delicate character to stand out.
