Nerello Mascalese and Nerello Cappuccio from Castiglione di Sicilia are hand-picked and hand-sorted, destemmed without full crushing and macerated in concrete tanks for about 10–12 days at 22–25°C, with a further post-fermentation maceration. The wine spends about six months in large wooden barrels and three months in bottle. Light ruby with faint purple reflections; small red fruits, morello cherry and black cherry.
