樹齢50年の古木が語る、シュナンの厚み。

樹齢50年を超える古木のシュナン・ブランを、自然酵母で丁寧に醸したキュヴェです。淡く輝きのあるレモンイエロー。熟した白桃やアプリコット、洋梨に白い花と蜂蜜が重なり、樽由来のバニラとミネラルが複雑さを添えます。なめらかなアタックからふくよかな果実味としなやかな酸が広がり、ミネラルが全体を引き締めて長い余韻へ。ホタテのポワレや白身魚のバターソテーとともに、時間をかけて。

Tasting note

Appearance: Pale, glistening lemon yellow. Moderate viscosity, giving an impression of concentration. Nose: A complex and elegant aroma of ripe white peach, apricot, and pear, with nuances of white flowers and honey. Further layers of subtle spice, vanilla from oak, and minerality intertwine. Palate: The attack is smooth, with a harmonious balance of rich fruit and supple acidity. While oak aging provides body and roundness, the minerality tightens the overall structure, leading to an elegant, long finish. This wine will reveal even greater depth with time.

Harvested by hand.
Slow, low-temperature pressing.
Fermented with natural yeasts.
The vineyard is located on the west-facing slope of the Butte de Chaume.
Aged for 14-15 months (12 months in barrel).
Malolactic fermentation fully completed.
