Tasting note

The delicate aromas of cherry, violet, wild strawberry, spice and licorice are characteristic, while the jammy notes enhance the rich flavor, leading to a lingering finish of black fruit with hints of white pepper. Gentle fruit and fresh taste.

Cultivation
Age: Over 90 years
Soil: Upper Jurassic, middle and upper Kimmeridgian. Very stony, with many small marine deposits.
Includes seashells.
Location: North-facing and south-facing slopes
Cultivation method: Organic and biodynamic farming (ECOCERT and Demeter certified)
Average yield: 35-40hL/ha

brewing
After fermentation with natural yeasts, the wine is aged for 13 to 15 months in 1-4 year old French oak barrels. No batonnage (lees stirring) is performed and SO₂ use is kept to a minimum.
