Hand-picked in the second and third decades of October, it macerates for 10–12 days at 22–25°C in wooden vats with punch-downs several times a day, then ages for more than a year in wooden barrels and concrete, plus about three months in bottle. Light ruby; small red fruits, flowers and minerality.
