サヴァニャン100%から生まれる、酸化熟成の白です。補酒を行わずに4年間樽で熟成させることで、レモンピールやクルミ、ヘーゼルナッツ、白い花、カレーを思わせるスパイス香が幾重にも重なります。凛とした酸を軸にしながら、時間とともに丸みと旨味が広がり、余韻にはほのかな苦味と塩味が静かに残ります。鶏肉ときのこのクリーム煮や帆立のバター醤油ソテー、白身魚の西京焼きと合わせて。

Tasting note

Bright and lustrous in appearance, with a pale yellow hue and golden highlights. The color is relatively light and transparent. The initial impression is very aromatic and complex. Citrus fruits, spices, and floral nuances are present, along with a hint of oak. As it breathes, it opens up further, revealing aromas of lemon juice and lemon peel, walnuts and hazelnuts. This is further layered with spicy notes of curry and white pepper, a delicate aroma reminiscent of a bouquet of white flowers, and nuances from the oak barrel. The attack is fresh, with a lingering acidity at its core. It gradually transitions to a rounder texture, and the aromas perceived on the nose richly unfold on the palate, offering an approachable umami. The finish is refreshing, yet accompanied by a subtle roundness and pleasant bitterness.
