キンメリジャンが奏でる、シャブリの緊張感。

シャブリを代表する名門ドーヴィサが、一級畑ヴァイヨンから仕込む一本です。キンメリジャンの石灰質土壌に根ざしたシャルドネから、蜂蜜の花やレモン、砕いた石灰を思わせるミネラルの香りが張り詰めた輪郭とともに立ち上がります。口に含むと凛とした酸のラインが貫き、フィニッシュのサワーレモンが余韻を引き締めます。霜害に見舞われた2021年は生産量が極めて少なく、その分凝縮感と透明感が同居。生牡蠣や車海老の塩焼きとともに。

Tasting note

The aroma of honey flowers, lemon, and minerals reminiscent of crushed limestone emerges with a dense and taut profile. Upon tasting, a very crisp line of acidity penetrates through, along with tense, fresh fruit, and a finish of sour lemon notes tightens the aftertaste. Due to the difficult vintage of 2021, affected by frost, production was extremely low, resulting in a wine that embodies "Chablis-ness" with its concentrated fruitiness and transparency coexisting. The lively acidity, characteristic of Vaillons on the left bank, supports the entire wine, and as it opens up after uncorking, a richer fullness also emerges.

Winemaking & technical data

Soil: Kimmeridgian (clay-limestone). Vaillons is a plot that clearly demonstrates a return to the most "Chablis-like" Kimmeridgian soil among Dauvissat's Premier Cru vineyards.
Vintage: 2021 saw severe frost damage, resulting in an extremely small production for this Vaillons, with only 7 barrels + 5 feuillettes (small barrels).
Harvest: Low yields, hand-selected high-quality grapes.
Fermentation: Traditional methods, with slow and careful fermentation.
Aging: Matured in Nevers oak barrels for a minimum of 1 year. Some new oak is used.
Winemaking philosophy: Maximizing the expression of the plot's characteristics. Pursuing a pure, concentrated wine with a structure capable of long-term aging.
