Winemaking
To ensure only the best berries are used, the berries are gently destemmed and optically sorted.
The juice is transferred to the fermentation tank using gravity and undergoes a cold soak period of up to 5 days.
Fermentation temperature should be maintained below 82°F (28°C).
Gentle extraction by punching and remontage.
After 30 days in the tank, the wine is extracted and pressed.
Natural malolactic fermentation in new French oak barrels.
