Tasting note

Deep red, almost black in color, the aroma has nuances of fresh fruits such as raspberry, cherry, and strawberry, and swirling the glass reveals spices, dried herbs, fennel, and a hint of flowers, creating a more complex impression. The taste is straightforward and well-balanced, with excellent concentration and volume. It has rich tannins, but is characterized by a smooth and rich mouthfeel, with a wonderful balance of density and freshness. It has a delicate and dense texture, and the finish is very long and complex. In addition to the flavors of fresh red fruits, licorice, and cinnamon, you can also enjoy the terroir-derived characteristics such as smokiness and flint nuances.

Winemaking & technical data

brewing
Whole bunch fermentation is carried out in small wooden fermentation tanks at 28°C. Extraction is done by manual pigeage.

Aging
Aged sur lie for 18 months in French oak barrels (60% new) made in our own cooperage. The wines are racked just once and then undergo an ageing process according to their individual characteristics.
