Tasting note

From the glass wafts honeysuckle, cedar, mandarin orange peel, and a hint of smoke. The sensual beauty of a rich vintage such as 2019 is held in check by coolness, salinity and a gentle oak framework, with notes of apricot kernel, mandarin, and turmeric spice expanding smoothly with golden pastry nuances derived from lees aging. Sweet spices and citrus with ripe bitterness lead to a long, dancing finish. This is a captivating and delicate wine with subtlety hidden deep within its broad style.

Cultivation Information

Dhondt-Grellet is a rising star among grower champagnes. Adrien Dhondt took over the family business in 2012 and transformed it into a producer dedicated to expressing the terroir of the prestigious Côte des Blancs vineyards.

Established in 1986, the estate owns approximately 6 hectares of Grand Cru and Premier Cru vineyards, with an average vine age of 40 years. Although Adrien is not organically certified, he prioritizes enhancing the vitality of soil microorganisms through horse plowing, avoiding herbicides and pesticides, and using homemade compost.

Inspired by the great white wine producers of Burgundy, their quality was recognized with the "Winemaker of the Year" award at the 2017 Trophées Champenois.

Winemaking Information

Fermentation and aging in the cellar are carried out in large oak barrels. The wine is aged on its lees (without cold stabilization, filtration, or fining), with topping up as needed.

In 2019, after separate vinification of each parcel, approximately one-third of the wine was aged for 11 months in barrels, including new ones. Disgorgement took place in July 2024, resulting in an Extra Brut with a dosage of just 1g/L.
