有機栽培(Agriculture Biologique認証)のコ(マルベック)を100%用いた2019年のカオール。石灰質台地の単一区画に立つ樹齢50年の古木が、凝縮感と深みをもたらします。深いガーネットの色調に、ブラックベリーやカシス、熟したプラムの果実香、鉄分を思わせるミネラルと黒胡椒、ほのかなスモーク。シルキーなタンニンが果実の厚みを包み込みます。ラムチョップのハーブグリルとともに。

Tasting note

Deep garnet colour. From the glass, concentrated fruit aromas of blackberry, cassis, and ripe plum emerge, along with mineral notes reminiscent of iron, black pepper, herbs, and a subtle hint of smoke. The palate is powerful yet smooth, with silky tannins enveloping the richness of the fruit and acidity giving it a crisp profile. The finish is long-lasting with nuances of spice and soil, and it is a wine that can be expected to become even more complex with age.

Grape origin:
Located on a calcareous plateau at an altitude of 350m, this single plot called "La Ciel" features a beautiful layer of red clay containing iron spread over the limestone bedrock. This plot, far from residential areas and roads, is home to a "mini lake" (a clay depression that collects rainwater), making it a favorite spot for wild boars.

Age of vines: Average 50 years
Yield: 35hl/ha

Vinification and aging:
Traditional vinification with approximately 30 days of maceration, then aged for two years in conical wooden tanks.
