ビオディナミ農法のマカブ100%を、野生酵母による自然発酵と無清澄・無濾過で仕上げた低介入の白。熟した洋梨や黄桃、アーモンドやヘーゼルナッツ、ドライハーブやフェンネルに、石灰やチョークを思わせるミネラルが重なります。口当たりはしっとりとオイリーで、旨味と塩味、穏やかな酸が全体を引き締めます。長い余韻とわずかなビター感。白身魚のポワレやコンテと。

Tasting note
The appearance is a slightly dark lemon yellow to pale gold. A slight cloudiness and viscosity, typical of unfiltered wines, may be present. The aroma has a natural expansiveness, with notes of ripe pear, yellow peach, and dried apple, along with nuances of almond, hazelnut, dried herbs, and fennel. This is further layered with mineral notes reminiscent of limestone and chalk, and subtle yeast-derived brioche and smoky tones, creating a complex and multi-dimensional bouquet. The palate has a moist texture, with a rich fullness accompanied by an oily sensation. The umami, characteristic of low intervention winemaking, comes to the forefront, while salty minerals and gentle acidity provide balance. It is dry yet deep, with a slight phenolic bitterness that outlines the flavor. The finish is long, with lingering notes of nuts, dried fruits, and herbs, creating an impressive finish where purity and complexity coexist.
