Apart from those used for cleaning, there is not a single pump in the building: from reception to bottling, the wine flows downward by gravity.\u003c\/p\u003e\n\u003cp\u003eFermentations are spontaneous, with native yeasts. The Pinot Noir is never filtered or racked, always unfined, and bottled by gravity. Yields are held to 5 t\/ha for Pinot Noir and 6 t\/ha for Riesling, and seven Pinot Noir clones are planted in the Simes Vineyard alone. The winery also bottles the single-parcel wines Zenith, Hieroglyph and Transcendence.\u003c\/p\u003e\n\u003cp\u003eThe vineyards lie at roughly 400–600 m at 50° north, on volcanic soils and moraines left by two glacial retreats. The Naramata Ranch Riesling comes from old vines planted in 1976.
